One Recipe Made for Three Generations
Lemon Meringue Pie
Ingredients
3 tablespoons of corn starch
1 1/4 cups of sugar
1/4 cup of lemon juice
1 tablespoon of grated lemon rind
3 eggs, separated
1 1/2 cups of boiling water
1 9-inch baked pie shell
6 tablespoons of sugar
Directions
Combine the corn starch, 1 1/4 cups of sugar, lemon juice, and lemon rind. Beat the egg yolks and add to the corn starch mixture. Gradually add boiling water. Heat the filling to boiling over direct heat. Boil for four minutes, stirring constantly. Pour into baked pie shell.
Beat egg whites until stiff. Gradually beat in 6 tablespoons of sugar. Spread the meringue over the top of the pie.
Bake at 425 F for 4 minutes or until meringue is slightly brown. Cool on a wire rack. Serve cold.
